I own an independent shop in Surrey, measuring 400 square metres. The shop is in a village with a population of around 5000 people. The majority of habitants are retired, so we get a regular, older trade.
Biscuits are very lucrative, which is why I’ve given them 5 bays in such a small store! They sell quickly, and you have to manage the best selling lines, which are mainly McVitie's products.
